1 lb ground turkey breast
2 eggs
1/3 c Parmesan cheese
1 Tbsp Italian seasoning
1/4 tsp of garlic powder
3/4 c Rao’s marinara sauce (or any low sugar/low salt option)
1 1/2 c whole milk mozzarella cheese
1 plum tomato, thinly sliced
Fresh basil
Preheat oven to 400°.
Combine ground turkey breast, eggs, parmesan cheese, Italian seasoning, and garlic powder in a bowl and mix gently until smooth.
Cut two, 14-inch pieces of parchment paper and place one on a flat surface.
Place the turkey mixture in a circular mound in the middle of the parchment paper.
Spray the second piece of parchment paper with cooking spray and place on top of the turkey mixture with the sprayed side down.
Using a rolling pin, flatten the turkey mixture into a thin, circular “pizza crust” shape.
Remove the top piece of parchment and gently slide the bottom piece of parchment and the turkey “pizza crust” onto a cookie sheet or pizza stone.
Bake for 20 minutes.
Remove from oven; top with marinara sauce, mozzarella cheese, and tomatoes.
Return to oven and bake for 7 to 9 minutes longer or until cheese is fully melted.
Garnish with chopped fresh basil. Slice and enjoy!
