2 Potatoes, baked
1/2 lb GROUND TURKEY
1 Clove garlic, minced
3/4 tsp fresh ginger, minced
1 c bok choy, thinly sliced
1/4 c green onions, thinly sliced
1 tbsp reduced-sodium soy sauce
1/2 tsp dry sherry
1/2 tsp sesame oil
1 tbsp cornstarch
2 tbsp water
Slice potatoes in half lengthwise. Scoop out center of potato to within 1/4-inch of potato skin. Reserve potato for other use.
In medium skillet, over medium-high heat, combine turkey, garlic and ginger. Cook 5 minutes or until turkey is no longer pink; drain meat juices if necessary. Add bok choy, green onions, soy sauce, sherry and sesame oil; cook 1 minute.
In small bowl combine cornstarch and water. Stir into turkey mixture and heat until mixture thickens.
Spoon turkey mixture into potato shells. On 9-X 13-X 2-inch jellyroll pan, bake shells in 375 degree F. oven 15 to 17 minutes or until heated throughout.
