8 oz non- or low-fat plain yogurt
2 tbsp fresh coriander, chopped
1 tbsp fresh parsley, chopped
1 tbsp fresh ginger, peeled and minced
2 Cloves garlic, crushed
1 tsp curry powder
1 tsp ground cumin
1/2 tsp hot red pepper sauce
Salt and freshly ground pepper To Taste
1 1-3/4 lbs TURKEY BREAST, halved
Combine all ingredients except turkey in a large shallow glass pan or bowl. Add turkey and marinate 1 hour in refrigerator, turning once. Discard unused marinade.
Cover the breast with foil and roast for 30 minutes in 350 degree F. oven. Baste occasionally. Uncover and roast for an additional 30 to 40 minutes until browned and the internal temperature reaches 165 degrees F.
