1 lb TURKEY BREAKFAST SAUSAGE
1-1/2 c refrigerated diced potatoes with onions
1 c tart apple, peeled, cored and diced
1 tsp dried sage leaves
1/4 tsp each salt and black pepper
8 Large eggs
Squeeze sausage from casings into a 10 to 12-inch heavy ovenproof* nonstick skillet.
Over medium heat, sauté sausage, breaking up sausage into small pieces with the back of a wooden spoon.
Add potatoes with onion and cook until sausage is no longer pink. Add apples and cook an additional 2 minutes.
Meanwhile, whip eggs with sage, salt and pepper. Pour eggs atop sausage mixture and stir gently to coat sausage pieces with eggs.
Cover pan and cook until eggs are almost set. Preheat broiler. Remove cover and place skillet 4-5 inches under preheated broiler to lightly brown eggs.
Serve immediately or cool and serve at room temperature. Cut into wedges.
*Or wrap heavy duty foil around the handle of regular skillet to prevent handle from burning when placing it under broiler.
