Olive oil, as needed
1-3/4 oz sweet onions, sliced thin
1/2 oz wild mushrooms (shiitake, oyster or morels), cleaned and sliced thin
1 5-1/2 oz TURKEY MIGNON OR TENDERLOIN
1 Strip TURKEY BACON
1 oz Mozzarella cheese
Heat oil over medium heat. Add onions and mushrooms and sauté until both are just tender. Hold for service.
Wrap turkey mignon/tenderloin with bacon strip. Grill mignon over direct, medium heat until the internal temperature reaches 170 degrees F.
Remove from grill and top the turkey with warm sautéed vegetables.
Cover all with Mozzarella slice and broil just until cheese melts.
Serve with roasted garlic potatoes and steamed broccoli.
