5 lbs GROUND TURKEY
4.5-oz packet mild taco seasoning mix
50 2.6-oz pita bread
12-1/2 c chunky tomato salsa
1 lb, 10 oz part-skim Mozzarella cheese, shredded
1 lb, 10 oz Cheddar cheese, shredded
2-1/2 lbs fresh lettuce, shredded
2-3/4 lbs fresh Roma tomatoes, diced
Brown and drain ground turkey. Add seasoning mix, cook for an additional 5 minutes.
Place seasoned turkey in shallow pans and refrigerate.
Mix two cheeses together, cover and refrigerate.
Assemble pizza. Place pitas flat on a lined hotel pan. Do not shingle. Spread 1/4-cup (#16 scoop) of salsa on each pita, spread toward edge. Next, sprinkle 1.5 ounces seasoned ground turkey over salsa. Top with 1-ounce cheese mixture.
Bake in a preheated 425 degree F convection oven for 5 minutes or until cheese is lightly browned.
Garnish each pita pizza with 1/4 cup shredded lettuce and 1/8 cup diced tomatoes.
Pizza may be served whole and cut in slices.
