Southwestern Turkey Salad

Ingredients

1 qt olive oil

1-1/2 Pints fresh lime juice

1-1/2 tbsp cayenne pepper

2 tbsp garlic, minced

12 lbs black beans, cooked

5 lbs tomato, chopped

5 lbs green bell pepper, seeded and chopped

1-1/2 lbs celery, chopped fine

1 lb green onions, minced

1 Bunch fresh cilantro, minced

6 lbs fresh yellow corn kernels, blanched and drained

6-1/2 lbs COOKED TURKEY ROAST, cubed

100 Each lettuce leaves, washed and dried

LIME DRESSING



In a separate bowl, combine olive oil, lime juice, cayenne and garlic. Whisk together. Cover and reserve in refrigerator for service.




SALAD PREP



 



Rinse the cooked black beans.



Toss beans, tomato, green pepper, celery, green onions, cilantro, corn and turkey in a large bowl.


Pour Lime Dressing over turkey mixture and toss well.


Line plates with lettuce leaves and serve 10-12 ounces of salad over lettuce leaves.


Note: Cooked turkey breast cubes, cutlets or strips may replace the roasted turkey.
