Spaghetti with Turkey-Tomato Sauce

Ingredients

3 c olive oil

6 lbs yellow onion, coarsely chopped

1/2 c garlic, minced

12-1/2 lbs GROUND TURKEY, lean or regular

25 lbs tomatoes, canned, peeled

3-1/2 c tomato paste

3-1/4 qt TURKEY STOCK

1/2 c oregano, dry leaf

2 tbsp basil, dry leaf

1/4 c thyme, dry leaf

2 tbsp red pepper flakes

Freshly ground pepper To Taste

8 lbs spaghetti, dry

1/3 c olive oil

1-1/2 lbs Parmesan cheese, grated

Directions


 



Heat olive oil in a large sauce pan and add onions. Saute 3-4 minutes. Add garlic and saute 1 minute.


Add ground turkey and cook until barely done, breaking up all the lumps.


Coarsely chop canned tomatoes, reserving juices. Add tomatoes, reserved juices, tomato paste, stock and seasonings. Simmer for 45-60 minutes.


Cook spaghetti in boiling water until al dente. Drain and add olive oil.


Serve 8 ounces of sauce over 7 ounces of pasta. Sprinkle with Parmesan cheese. Garnish with chopped parsley if desired.
