1-1/2 lbs TURKEY THIGHS, skin removed
1 lb acorn squash, cut into 1-inch rings
1 lb cooking apples, cored and cut into 1/2-inch rings
1/4 c apple juice
3 tbsp packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
In 13-X 9-X 2-inch baking dish place turkey thighs in one half of dish. Layer squash and apple rings, alternately, in other half of dish.
In small bowl, combine apple juice, brown sugar, cinnamon and nutmeg; pour over turkey, squash and apples.
Cover dish with foil and bake in a preheated 350 degree F oven for 1 hour; uncover and baste with juices. Bake, uncovered, 15 minutes or until internal temperature of thighs registers 165 degrees F on meat thermometer.
