6 (10-oz loaves) sweet baguettes
1-1/2 c strawberry preserves
2-1/4 lbs California strawberries, washed, stemmed and sliced
12 oz baby spinach, washed and dried
1-1/2 lbs cooked turkey breast, thinly sliced
1-1/2 lbs Gruyere cheese, thinly sliced
Cut 1 baguette in half horizontally. Spread the cut surface of bottom half evenly with 1/4 cup preserves.
Arrange 6 ounces sliced strawberries on top of preserves in 1 layer; layer 2 ounces spinach on top of strawberries. Layer 4 ounces turkey on top of spinach. Layer 4 ounces cheese on top of turkey; place top half of baguette over cheese, cut side down.
Cut baguette into 4 equal pieces; wrap each piece tightly in plastic wrap.
Repeat with remaining ingredients to make 24 paninis. Refrigerate until needed.
Serving: Per order, unwrap 1 panini. Heat on hot griddle with weight on top, turning once, about 5 minutes or until cheese is melted and baguette is crusty.
NOTE: May use whole wheat or low-carb rolls instead of baguettes.
