1 Large lemon
1 c + 2 tbsp commercial mayonnaise
1 tbsp freshly minced garlic
4 lbs GROUND TURKEY
3 Bunches scallions, chopped fine
8 oz Dijon mustard
1 tbsp fresh thyme
1 tbsp fresh parsley, chopped
1 Large egg white
1-1/2 tsp kosher salt
1 tbsp freshly ground black pepper
1 Dozen Kaiser rolls, split and toasted
12 1-oz slices Swiss cheese
1 Head buttercrunch lettuce
LEMON-GARLIC MAYONNAISE
Zest lemon and squeeze juice.
Mix lemon zest and juice with mayonnaise and garlic. Cover, refrigerate and reserve for service.
TURKEY BURGER
In a large bowl, mix ground turkey, scallions, mustard, herbs, egg white, salt and pepper. Mix well, but gently, to incorporate all ingredients. Cover and refrigerate for 1 hour to allow flavors to blend.
Portion into 1/3-pound burgers.
Sauté in a medium hot skillet or on a flat top griddle until the internal temperature reaches 165 degrees F, turning to ensure that both sides are golden brown. Allow to rest for 1 minute before service.
PLATING INSTRUCTIONS
Spread Lemon-Garlic Mayonnaise on toasted Kaiser rolls. Place turkey burgers on Kaiser rolls.
Top each with a slice of Swiss cheese and lettuce leaves.
