Add some flavor to your lunchtime routine with a simple, yet tasty turkey roll-up with Tex-Mex flare. Dip in salsa or sour cream or top it with cheese and pico de gallo for a flavor bonus!
1 10" flour tortilla
1 oz green chile paste
3 oz smoked turkey breast, thinly sliced
1 oz lettuce, shredded
2 oz smoked Gouda, sliced
2 roasted red peppers, cut 1/2" thick
For Green Chile Paste:
2 oz canola oil
5 lbs onions (sweet)
5 large green peppers, roasted and peeled
5 poblano chiles, roasted and peeled
5 large jalapeno peppers, roasted and peeled
5 garlic bulbs, roasted and peeled
salt to taste
For Green Chile Paste:
Caramelize onions in canola oil.
Roast peppers, chiles and garlic and prepare as indicated above.
Purée all ingredients in food processor until very smooth.
Season to taste.
Hold tightly covered in refrigerator for a maximum of 10 days
For Roll-Up:
Spread Green Chile Paste on 3/4 of tortilla, leaving uncovered portion on left side.
Layer with turkey, lettuce, cheese, and red pepper strips.
Fold up bottom about 2" and roll toward side without Green Chile Paste.
Cut in half on the diagonal.
