2 tbsp canola oil
2-1/4 lbs GROUND TURKEY
3 c chopped onion
3 c salsa
3 c canned white beans, drained and rinsed well
24 taco shells
6 oz Cheddar cheese, shredded
1-1/2 c lettuce, shredded
1-1/2 c tomatoes, diced
In medium non-stick skillet, heat oil. Add ground turkey and sauté until turkey has lost all traces of pinkness.
Add onions; cover and cook until onions are softened. Add salsa and white beans. Cover and simmer for 10 minutes.
Divide evenly among taco shells.
Top with cheese, lettuce and diced tomato.
