1 Package (6 oz) cornbread stuffing mix
3/4 lb NO-SALT TURKEY BREAST, cut into 1/2-inch cubes
1 Can (8 oz) whole kernel corn, rinsed and well-drained
1/2 c green pepper, seeded and chopped
1/2 c onion, finely chopped
1 Jar (2 oz) chopped pimiento, drained
1 c low-calorie cucumber or buttermilk salad dressing
Reserve 1/4 cup stuffing mix for garnish.
In large bowl combine remaining stuffing mix, turkey, corn, green pepper, onion, pimiento and dressing. Mix thoroughly; cover and refrigerate 4 hours or overnight.
To serve, top salad with reserved stuffing mix.
