4 Large ruffled lettuce leaves, washed and well dried
2 Navel oranges
1 Carambola star fruit, sliced paper thin
2 c COOKED TURKEY, cut into 3-inch julienne strips
1/4 c green onions, finely chopped
1/4 c green pepper, finely diced
1/4 c blanched slivered almonds
1/2 c orange juice
2 tsp olive oil
1 tsp sugar
3/4 tsp celery seeds
ASSEMBLY
Stack lettuce leaves and gently roll into a cone or bundle shape. With sharp knife slice across bundle at 1/2-inch segments. Four leaves will yield about 2 cups of lettuce ribbons. Place 1/2-cup lettuce in the center of four chilled dinner plates.
Wash and peel oranges, removing all white membrane. Slice oranges in pinwheels or remove individual segments.
Position orange segments/slices and star fruit around edge of dinner plate.
Place turkey strips in spoke arrangement over lettuce.
Mix green onion, green pepper and nuts and sprinkle over individual salads.
Spoon 2 tablespoons of Citrus Dressing on each salad. Serve immediately.
Pass additional dressing if desired.
CITRUS DRESSING
Combine orange juice, olive oil, sugar and celery seed in a blender. Blend until smooth.
Pour into serving pitcher.
