3 lbs OVEN ROASTED TURKEY BREAST, skin removed & cut into 1/2-inch pieces
3 lbs tart and juicy apples, cored and chopped
3 c chopped celery
3 c crushed pineapple, drained well
2 c lemon yogurt
2 c mayonnaise
2 tsp Dijon mustard
1 tsp celery seed, crushed
24 5-inch whole wheat pita pockets, tops cut and removed
As needed leaf lettuce, washed, dried and chilled
In large bowl combine turkey, apples, celery and pineapple.
In separate bowl combine yogurt, mayonnaise, mustard and celery seeds. Fold dressing into turkey mixture.
To serve, line each pita with a lettuce leaf and spoon turkey mixture into each pita.
Serve with chips or fresh fruit salad.
