1 5-oz TURKEY TENDERLOIN, gently flattened
As needed salt and freshly ground black pepper
1 10-inch flour tortilla
1 oz crushed pineapple, well drained
2 oz pico de gallo
2 oz pepper jack cheese, shredded
As needed oil for frying
Season turkey with salt and pepper. Grill tenderloin to an internal temperature of 165 degrees F.
Place grilled turkey atop tortilla.
Layer with pineapple, pico de gallo and cheese.
Tightly wrap tortilla "bedroll style", enclosing all edges.
Deep-fry for 2-1/2 minutes.
Slice on the diagonal and serve with seasoned fries.
