3 lbs ground turkey
1 small onion grated
5 tbsp smoked paprika
5 tbsp minced garlic
2 tbsp Mexican oregano
2 tbsp dark chili powder
5 tsp sweet paprika
1 tbsp sea salt
1 tbsp ancho chile powder
1 tbsp red anatto powder
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp cinnamon
1/2 tsp allspice
Combine all ingredients in a medium-sized bowl.
Form turkey mixture into two 1 1/2 lb loaves. Wrap with plastic wrap and refrigerate for two hours.
Preheat your grill for cooking to 275°F indirect heat.
Remove ground turkey loaves from plastic wrap and place on grill. Grill until the internal temperature is 165°F. Remove.
Rest for 10 minutes. Slice and serve.
Note: Feel free to glaze the loaves with your favorite hot sauce, such as Sriracha. For a more moist loaf, add 3/4 cup of breadcrumbs soaked in 1/4 cup milk and 1 egg to the ground turkey mixture.
