1 lb TURKEY CUTLETS (about 4 cutlets)
1/2 tsp pepper
1/4 tsp salt
1 tbsp margarine
1 c apricot nectar
1 tsp fresh ginger, minced
1 tsp soy sauce
1 tsp corn starch
4 green onions, white and green parts, cut into 1-inch pieces
Sprinkle cutlets with pepper and salt.
In 12" or larger nonstick skillet, melt margarine over medium high heat. Saute cutlets 2 minutes; turn and saute an additional 1-1/2 to 2 minutes or until no longer pink. Remove from skillet and keep warm.
In small bowl, whisk together apricot nectar, ginger, soy sauce and corn starch.
Add green onions to skillet; cook for 30 seconds; add apricot nectar mixture, stirring until thickened, about 1 minute. Pour over reserved cutlets and serve.
