1 lb TURKEY BREAST CUTLETS
1/4 tsp salt
2 tsp canola oil, divided
2 Large cloves garlic, minced
1/3 c pineapple preserves
1/4 c fresh lemon juice
1/4 tsp ground ginger
1/4 tsp curry powder
1 tbsp fresh cilantro, cleaned and chopped
Sprinkle turkey with salt.
In large non-stick skillet, over medium-high heat, saute cutlets in 1 teaspoon oil 2 minutes per side or until centers are no longer pink. Remove turkey to platter and keep warm.
Heat remaining oil and saute garlic 30 seconds. Stir in preserves, lemon juice, ginger, curry powder and cilantro. Mix until blended and preserves are melted.
To serve, pour pineapple sauce over turkey cutlets.
