1 lb RAW TURKEY BREAST, skinless, rough chop
4 Large egg whites
1/4 c heavy cream
1/4 tsp dried marjoram
1/4 tsp dried sage
To taste salt and freshly ground black pepper
As needed vegetable oil
As needed creme fraiche
As needed dried cranberries
Place chopped turkey in food processor and slowly incorporate egg whites and cream. Add herbs and seasonings. Process until well blended.
Cover and chill one hour.
Separate the mixture into 1-ounce portions; form into mini cakes.
Pan sear with vegetable oil.
Top each with a dollop of creme fraiche and dried cranberries.
