Whether going whole bird or roasting the cuts you love the most, there’s nothing like a homemade turkey gravy to top it off. And if you’ve got just 10 minutes to spare, there’s no reason not to make a little gravy magic happen.

1/4 c turkey drippings (fat and juices from roasted turkey, whole or cuts)
1/4 c all-purpose flour
2 c turkey stock or chicken stock
1/4 tsp salt
1/2 tsp pepper
Pour drippings from the roasting pan into a 2 cup measuring cup or bowl, leaving the larger chunky brown bits in the pan.
Put 1/4 cup of the drippings in a small pot on the stove over medium-low heat. Stir in flour.
Cook over medium heat, stirring constantly, until mixture is smooth and bubbly.
Stir in stock, and bring it to a boil, stirring constantly.
Continue boiling and stirring for a couple minutes or until gravy reaches desired consistency.
Add salt and pepper, and adjust seasoning to your taste.
