Turkey Ham and Barley Salad

Ingredients

1/3 c apple cider vinegar

1/2 c sweet onion, chopped

2 tbsp olive oil

1-1/2 tsp reduced-sodium soy sauce

1 tbsp fresh lemon juice

1 tsp salt

1 tsp freshly ground black pepper

1 tsp Dijon mustard

1/2 tsp sugar

1 Clove garlic, minced

3/4 c barley, cooked and cooled

1 lb TURKEY HAM, cut into 1/2-inch cubes

2 c frozen sugar snap peas, defrosted

1 c coarsely chopped celery

1/2 c coarsely chopped red or green pepper

2 oz chopped pimientos, drained

Directions

Dressing: In small bowl combine vinegar, onion, oil, soy sauce, lemon juice, salt, pepper, mustard, sugar and garlic; cover and set aside.

Salad: In large bowl combine barley, turkey ham, peas, celery, peppers and pimientos. Fold dressing into turkey/barley mixture.

Cover and refrigerate several hours.
