3 tbsp butter
2 tbsp flour
7 oz half and half
3 oz Swiss cheese, grated
3 oz Mozzarella cheese, grated
3 oz Fontina cheese, grated
1 oz Maytag Blue cheese, crumbled
1/2 tbsp Dijon mustard
12 oz TURKEY HAM, cut in 1/4" X 2" strips
1 Medium onion, cut into 1/4" X 1" strips & caramelized
Freshly ground black pepper To taste
1 lb rotini or bowtie pasta, cooked to al dente stage
2 oz Parmesan cheese, freshly grated
In a large stockpot, melt butter and stir in flour. Add cream and blend well. Add Swiss, Mozzarella, Fontina and Maytag cheeses. Stir in mustard. Cook over low heat, stirring constantly until cheeses have melted.
Stir in turkey ham and caramelized onion. Add pepper. Adjust seasonings if required. Stir in pasta.
Portion into individual buttered dishes. Top each with Parmesan.
Bake in a preheated 350 degree F. oven for 15-20 minutes or until heated through and Parmesan is golden.
