6 Large potatoes, baked
1 c TURKEY HAM, diced
1/4 c finely chopped green pepper
2 tbsp finely chopped onion
1 tbsp fresh rosemary, minced
1/2 tsp salt
1/4 tsp pepper
1 c low-fat yogurt
1/2 c reduced-fat Cheddar cheese, grated
Fresh rosemary for garnish
Slice top off each potato. Scoop out center of each potato to within 1/4-inch of potato skin; set aside.
In medium bowl combine potato, turkey ham, green pepper, onion, rosemary, salt, pepper and yogurt.
Spoon turkey and potato mixture evenly into each potato shell; top with cheese. On microwave-safe plate arrange stuffed potatoes spoke-fashion.
Cook in microwave oven at HIGH (100% power) 4 minutes or until cheese melts and potatoes are hot.
Garnish each potato with fresh rosemary sprigs.
