8 oz OVEN ROASTED, HONEY BAKED TURKEY or COOKED TURKEY, diced
2 c shredded cabbage or bagged cole slaw mix
2 c pre-cut vegetables (from the salad bar)
1/3 c dry roasted unsalted peanuts, toasted
1/3 c Chinese stir-fry sauce
2 tbsp honey
12 Whole bibb or Boston lettuce leaves
12 Whole fresh chives
In a medium bowl, combine turkey, shredded cabbage, vegetables and peanuts. Add stir-fry sauce and honey. Toss gently, coating all surfaces.
Fill each leaf with equal amounts turkey mixture, about ½ cup per leaf.
Fold up bottom and two sides to form wraps. Tie each wrap closed with whole chive.
Serve 3 wraps per serving for an entree or one wrap per serving for an appetizer.
