1/4 oz green olives, chopped
1/8 oz pimentos, chopped
1/4 oz celery, chopped fine
1/8 oz capers, drained well
1 oz garlic flavored olive oil
1 oz romaine lettuce, chilled and torn into bite size pieces
1-1/2 oz cucumber, chopped
1-1/4 oz tomatoes, chopped
4 oz FULLY COOKED CAJUN SEASONED TURKEY BREAST, skinless and cubed
1/2 oz TURKEY SALAMI, sliced into strips
1/2 oz Provolone, sliced into strips
As needed garlic flavored olive oil
Mix together olives, pimentos, celery and capers. Stir in olive oil and blend well. Place romaine, cucumber and tomatoes in a bowl and toss with olive dressing.
Place on a chilled entrée plate and top with turkey breast, turkey salami and Provolone strips.
Drizzle additional olive oil atop salad. Serve with grilled country bread.
