2 tbsp white wine vinegar
1 tbsp olive oil
2 tsp fresh lime juice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground ginger
1/4 c minced red onion
1 jalapeno pepper, seeded and minced
1 lb NO-SALT TURKEY BREAST, cut into 1/4-inch cubes
4 Leaves red leaf lettuce
As needed bagel chips
In medium bowl whisk vinegar, oil, lime juice, salt, pepper and ginger. Stir in onion, pepper and turkey. Cover and refrigerate several hours.
To serve, line plate with lettuce and spoon salad over top. Serve with bagel chips if desired.
