1 lb TURKEY SAUSAGE
1/2 c onion, minced
1 Clove garlic, minced
1/2 tsp poultry seasoning
1/4 tsp red pepper flakes
50 Fresh mushrooms, 2-inches diameter, washed, dried & stems removed
In a large skillet, over medium-high heat, saute turkey sausage, onion and garlic until sausage is no longer pink. Stir in poultry seasoning and pepper flakes.
On a wire rack, placed inside a 10X15X2-inch baking pan, arrange mushrooms (rounded side down). With a teaspoon, carefully mound turkey mixture into each mushroom cap. (May be made ahead, covered and refrigerated for 4-5 hours prior to baking.)
Bake at 350 degrees F. 15-20 minutes or until mushrooms are soft and mixture is heated throughout. Serve hot.
