Ingredients

1-1/2 lbs yellow onions

1-1/2 lbs celery

12-1/2 lbs GROUND TURKEY, lean or regular

1 tbsp each salt and white pepper

2 tbsp ground ginger

1-1/2 lbs bread crumbs, dry

13 Large eggs, lightly beaten

7 oz butter substitute

1-1/2 c cornstarch

3 c lower-sodium soy sauce

3 c white wine, dry

3 c pineapple juice, concentrate

3 tbsp ground ginger

1-1/2 Gallons TURKEY STOCK

6-1/4 lbs brown sugar

2 c cornstarch

15 lbs pineapple chunks, juice reserved

1 qt water

2 c white vinegar

2/3 c lower-sodium soy sauce

Directions

Meatballs

Preheat conventional oven to 400 degrees F.

Mince onions and celery. Set aside.

Combine ground turkey, salt, pepper, ginger, bread crumbs, eggs, onion and celery. Mix well.

Shape into 1-inch balls. Place in shallow pan. Brush with butter substitute. Bake in oven until internal temperature reaches 165 degrees F.


Teriyaki sauce

In a sauce pan, combine cornstarch, soy sauce, wine, pineapple juice, ginger and turkey stock and mix well. Cook and stir until it comes to a boil, simmer for 5-10 minutes.

Add meatballs to sauce and cook for 2 minutes.


Sweet and Sour Sauce

In a large sauce pan, combine brown sugar and cornstarch. Mix well. Stir in pineapple juice, water, vinegar and soy sauce.

Heat over a medium-high heat for 12 minutes, stirring occasionally.

Add pineapple chunks and simmer for 7-10 minutes. Add turkey meatballs to sauce and simmer for 5 minutes.

Serve as needed.

Place 7 meatballs in bowl with 3 ounces of Sweet and Sour Sauce.

Garnish as needed.
