Ingredients

1-1/2 tbsp extra virgin olive oil

2 c onion, chopped

8 oz canned green chiles, chopped and drained

2-1/2 oz taco seasoning mix

40 oz canned crushed tomatoes with juices

4 qt TURKEY BROTH

20 oz frozen corn kernels, thawed

6 c PULLED TURKEY or COOKED TURKEY, 1/2-inch cubes

8 oz tortilla chips, roasted

1 c sour cream

2/3 c cilantro leaves, diced

In a large stockpot, over medium-high heat, sauté onion in oil until translucent, stirring frequently. Add chilies and taco seasoning mix. Cook, stirring 2-3 minutes.


Add tomatoes and stir in broth. Bring to a boil. Add corn and diced turkey. Reduce heat to low and simmer for 10 minutes. Adjust seasoning as necessary.


At service, ladle 8-ounces soup into individual warmed bowls. Garnish each with ½-ounce broken tortilla chips, 1 tablespoon sour cream and cilantro leaves.
